Potatoes with green sauce and minced eggs
For the sauce, mix crème fraîche, double cream, herbs and lemon juice in a dish. Add salt and pepper. Cut the boiled egg into cubes and add them to the sauce. Cook the potatoes. Tip: Choose the herbs according to your taste: parsley, dill, lemon balm, sorrel, tarragon or chopped green salad.
Apple Sorbet
Bring the water and the sugar to the boil. Peel, core and chop the apple. Add the chopped apple and the lemon juice to the water/sugar mixture, cook for 2-3 minutes and puree it. Strain the apple compote through a sieve. Let it cool down and put into the freezer. Mix it immediately before serving and garnish it (as you like). Tip: Any other fruit can be used for the sorbet.
