Crab fried rice (Kao Pad Poo)
Peel onion and garlic, cut green onion roots, wash, and pat dry. Cut onion into thin
slices, mince garlic, and slice green onion. Heat oil in a wok over medium heat. When oil
is hot, add sliced onion and minced garlic, fry until fragrant and onion is cooked, then add
eggs. Scramble eggs with spatula and spread in a thin layer. Add soy sauce, and let the
eggs set. Add crab meat, season with sugar, and then stir thoroughly. Add cooked rice,
season with soy sauce and stir fry until all ingredients are mixed well together. Add sliced
green onion, stir well and then remove from heat. Put the fried rice on a plate, place sliced
cucumber and a wedge of lime around the rice and sprinkle with coriander, then serve
immediately.
Chicken and gourd soup (Kai Tom Fak)
Thoroughly pound garlic cloves, dried pepper and coriander roots and set aside. Add
pounded garlic, pepper corn, coriander root and chopped chicken. Simmer over the lowest
heat until chicken pieces are nearly tender. Remove the scum. Add gourd, continue to
simmer until gourd and chicken are tender Season with soy sauce and taste. Continue to
simmer for a moment before turning off the heat. Sprinkle with fresh coriander leaves,
sliced green onion and fried garlic before serving.
