Pasta with chicken, vegetables

Ingredients

50 g Pasta (protein-reduced), uncooked
50 g White bread (protein-reduced)
50 g Chicken breast, fresh
100 g Courgettes, fresh
50 g Onions, fresh
100 g Eggplants, fresh
2 g Garlic, fresh
20 ml Olive oil
50 g Tomatoes, canned
1 g Seasonings (salt, black pepper, nutmeg)

Cooking Instructions

Pasta with chicken and mixed vegetables

Boil the noodles until tender. Heat half of the oil in a pan and fry the chicken. Season the
chicken with salt and pepper to taste. After frying, set the chicken aside. Heat the rest of
the oil and fry the chopped onion. Add the sliced eggplant and cook for 15 minutes. Add
courgette and tomato and cook a further 15 minutes. Season the vegetable mix with salt,
herbs and pepper to taste.
