Ingredients

150 ml Coffee
10 g (2 tsp) Sugar
10 ml Cow’s milk
15 ml (1½ tbsp) Cream (30% fat)
Prune cake
250 g Protein-reduced flour
15 g Yeast
⅛ l Cream/water mixture
20 g Sugar
30 g Butter
1 kg Prunes, fresh
2 tbsp Sugar
- Salt
- Lemon juice
- Butter for the baking sheet

Please note: only eat 1 piece or rather 80 g of the cake per serving!

Sieve the flour into a dish. Solve the yeast in some slightly warm cream/water mixture and allow the yeast to swell (approx. 10 min). Add the rest of the cream/water mixture, lemon juice, sugar, salt and butter and prepare a dough. Cover the yeast-dough and store it at a warm place and allow for swelling (20-30 min.) Preheat the oven to 150 C. Transfer the yeast-dough to a greased baking sheet and roll it out. Cover it with the chopped prune pieces and sprinkle sugar and cinnamon over the prune cake. Bake in the centre of the oven for 20–30 min. Cut it into 24 pieces.
