Ingredients
1/2 cup | Corn starch |
1/2 cup | Water |
1/2 cup | Sugar, granulated |
2 cups | Coconut milk |
1/2 cup | Dessicated coconut |
Cooking Instructions
In a non-stick pan over medium heat, bring coconut milk and sugar to a gentle boil. In a small bowl, mix the corn starch with the water. Stir until smooth. Slowly add the corn starch solution to the boiling milk mixture. Stir fast for about 3 minutes to thicken. Transfer to a greased pan and let cool until the mixture firmly sets. Slice into desired sizes and then sprinkle with coconut flakes just before serving.
