Ingredients

Fried minced chicken in broad bean paste with lettuce
200 g Lettuce, fresh
45 g Chicken breast
100 g Red pepper, fresh
5 g Broad bean paste
3 g Scallions, fresh
15 ml Oil
½ g Salt and monosodium glutamate
10 g Starch dissolved in water
Mutton radish soup
5 g Mutton
50 g Radishes, fresh
¼ g (1 pinch) Salt
¼ g (1 pinch) Chicken powder
1 ml Sesame oil
¼ g (1 pinch) Coriander
100 g Cucumbers, fresh
5 ml Sesame oil
Hodgepodge tofu
25 g Tofu
5 g Black mushrooms, fresh
60 g Bamboo shoots, fresh
3 g Dried shrimps
13 ml Oil
1 ml Sesame oil
½ g Salt and monosodium glutamate
10 g Starch dissolved in water

Cooking Instructions

Fried minced chicken in broad bean paste with lettuce

Clean the lettuce. Dice the chicken breast, dice the red pepper and chop the scallion. Fry the diced chicken. Put the chopped scallion in the pot fi rst and then the broad bean paste, fry for a while then add salt and monosodium glutamate, diced chicken and red pepper. Dissolve some starch in water and add to the dish before turn off the heat.

 

Mutton radish soup

Wash and trim the meat. Boil in water till the froth appears of top. Skim froth and add the sliced radish, salt, chicken powder, sesame oil and coriander and slow boil for several hours until meat is tender.

 

Hodgepodge tofu

Cut the tofu into triangle-shape cubes and fry them, chop the black mushroom and bamboo shoots into slices. Prepare a pot with water, put the fried tofu, black mushroom, bamboo shoots, dried shrimps, salt and monosodium glutamate into the pot and cook for 5 minutes, then add the starch dissolved in some water and sesame oil.
