1 stalk Lemongrass
10 g Ginger, fresh
10 ml Lemon juice
1 g Coriander
50 g Sea bass fish, fresh
50 g Rice, uncooked
Mixed spiced fruit salad - Fruits
40 g Cucumbers, fresh
20 g Jicamas (yam beans), fresh
25 g Papayas, fresh
25 g Apples, fresh
50 g Pineapples, fresh
25 g Green Pears, fresh (firm)
25 g Apples, fresh (firm)
Mixed spiced fruit salad - Sauce
10 g Peanuts, roasted
10 g Red chillies
20 g Sugar, brown
5 g Tamarind paste, dissolved in 20 ml water
20 g Green bananas, fresh

Cooking Instructions

Steamed sea bass with rice

Place the lemongrass, sliced ginger and lemon juice on the fi sh. Steam the fi sh for 5-7
minutes. Remove and sprinkle with coriander on top. Serve with rice.

Mixed spiced fruit salad

Arrange the sliced cucumber and the cubed/sliced fruits in separate heaps on a serving
plate. For the sauce, chop the peanuts finely and blend in the chillies, brown sugar,
tamarind, liquid and banana (optional) to form a paste. Serve the sauce and fruit
separately by dipping the fruit into the thick sauce or mix fruits and sauce together and
serve as a salad.
